U Gardinovce se vra\u0107a po\u010detkom kriznih devedesetih da bi pomogao ocu u pekari. &#8211; Moj deda po kome sam<span style=\"\">\u00a0 <\/span>dobio ime zanat je nau\u010dio od svoga brata Dimitrija. Deda je radio do 1965. kada je otac Radenko preuzeo pekaru sa izu\u010denim zanatom i pekarskim iskustvom u pekarama u Titelu i Novom Sadu. Ma\u0161ine u pekari su nabavljene ve\u0107inom<span style=\"\"> <\/span>1965. godine. Tada je kupljena i ova polovna mesilica za koju se tada mogao kupiti novi fi\u0107a, prise\u0107a se porodi\u010dnih pri\u010da Simo, a koje potvr\u0111uje i njegova majka Nera.<br \/>\n\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Stoj\u0161i\u0107i obja\u0161njavaju da prave doma\u0107i hleb, bez aditiva. Jedino dodaju<span style=\"\"> <\/span>pobolj\u0161iva\u010d za bra\u0161no jer i pored me\u0161anja dve-tri vrste bra\u0161na iz razli\u010ditih mlinova ono nema potrebnu energiju, kvalitet za dobar hleb. Bra\u0161no se proseje, sipa se voda i kvasac. Ma\u0161ina ga zamesi i \u010deka se da testo &#8222;nagrabuje&#8220; nakisne. Ponovo se premesi i kada nakisne spremno je za<span style=\"\">\u00a0 <\/span>cvikanje &#8211; se\u010denje i stavljanje na vagu. Ru\u010dno se prave vekne, cipovke, cvetovi&#8230; Dok se \u010deka da testo nakisne potpali se pe\u0107 koja je zidana na temeljima pe\u0107i koju je jo\u0161 Simin deda zidao, tada \u010duveni majstor za turske, pekarske<span style=\"\">\u00a0 <\/span>pe\u0107i. <img loading=\"lazy\" decoding=\"async\" width=\"300\" height=\"225\" align=\"left\" src=\"\/UserFiles\/Image\/Februar2007vesti\/stara-mesilica.jpg\" alt=\"\" \/>Pe\u0107 se potpaljuje ogrezinama &#8211; kukuruzovinom, zatim se stavljaju va\u0161ine &#8211; snopovi pru\u0107a bagremca i jasena koji se moraju pripremiti zimi. Temperatura u pe\u0107i mora biti adekvatna da bi hleb dovoljno narastao, u suprotnom &#8211; ne naraste, ili se razi\u0111e. Treba biti pravi majstor za lo\u017eenje pe\u0107i jer je to u direktnoj vezi sa vremenskim prilikama, uverava Sima. U jednom turnusu se ispe\u010de oko 160 komada hleba. Njihova prose\u010dna proizvodnja je oko 700 malih i velikih hlebova, cipovki, cvetova,<span style=\"\">\u00a0 <\/span>kifli koji isporu\u010duju osim Gardinovaca u obli\u017enji Kovilj i Budisavu. Supruga Biljana, trgovac po struci, ka\u017ee da je njena baba uvek govorila da ni kera za pekara ne bi dala ali da je zadovoljna iako obavlja sve poslove u pekari. Znaju da svi koji rade u pekari, imaju jo\u0161 dva radnika, moraju poznavati kompletan proces proizvodnje hleba da bi mogli<span style=\"\"> <\/span>i dalje da prave doma\u0107i hleb.
